Easy Black Bean Soup
- 1 can black bean soup
- 2-3 tablespoons sherry
- 1 dollop of sour cream
Heat soup in pan on the stove. Add sherry. Place hot soup in blender and puree until smooth. (Add more sherry if needed) Pour into mug; add sour cream and stir.
Mashed Sweet Potatoes
- 2 sweet potatoes cooked or use small can of sweet potatoes drained.
- 2 tablespoons of butter
- 2 tablespoons of brown sugar orange juice
Place all ingredients in a blender or food processor. Blend until smooth. Add a splash of orange juice if too thick. Heat in small saucepan over low heat until warm.
Variation: Pureed turnips or parsnips. (Use about 4 and add milk if too thick.)
Cucumber Salad
- 1 cucumber peeled and diced, seeds removed
- 1 tablespoon capers
- 1 tablespoon pickle relish
- 1 tablespoon lemon juice
- 2 tablespoon mayonnaise or more to puree easily
Put all ingredients into a blender or food processor and process until smooth
To add protein. Drain a can of Garbanzo beans and add with a tablespoon more mayonnaise.
